I'll start with a great mailbox add-on called Postal.

Here are is a great recipe tracking add-on that lets you scan your professions to see what recipes you are lacking and where to find them.

These are my two favorite auctionhouse add-ons.

Auctionator is simple and powerful; I use it to make shopping lists for buying mats.

Quickauction is great for making categories of stuff then batch posting tons of glyphs and gems.
